When researching the origin and traditions related to the hearty genuine mountain village Valencian Paella, with its meats being chicken rabbit and pork meatballs, I discovered that upto the 1970's when money was still short for many families the full fledged paella was only eaten on Easter Monday, first communion sundays, wedding feasts, St James day,  in july, summer fiesta days, Valencia Day and Christmas day when full family gatheringsof twenty or more opeople are the norm.

Firstly the english version of the book AUTHENTIC VALENCIAN PAELLAS now has a more attractive and informative cover and a number of useful additions to the text have been made. Secondly a reminder that te essential meats for a truly authentic Valencian Paella as cooked these days by families for Sunday lunch and was previously cooked for wedding and  first christening feasts. Thirdly the substitute of choped up lamb ribs although done in some restaurants, especially it would appear in Alicante and Castellon provinces, ends up with greasy rice and an overpowering lamb taste.

Having my middle daughter Sophie and grandson George in Barx a long weekend and a sunny day it was a good chance yesterday to cook a paella in the garden with great mountain views together with friends Alinka and Rafa who translated my Paella book into Castellaño and added a poem about the paella to the text. Cooked one for eight to ensure that there were a few extra helpings to freeze for a warm up on busy days. when arriving home late.

As a result anyone can grow a diverse range of salad leaves in small spaces using raised beds, growing tables or a ten_tub vegetable garden using regular or lare size builders buckets as described on page 61 of the best selling book 'Growing healthy vegetables in Spain'.

During the early years of our part-time and then full time living in the Barx/La Drova valley most of the historic agricultural lands including the mountainside olive and almond groves were still being maintained and the village was largely self sufficfient in foodstuffs. But by the mid 1990's,when we had lived here almost ten years, more and more was being abandoned as agriculturalists started to work in the construction and tourist industries and their children followed suite.
