Unfortunately most traditional village olive presses have now been closed down so one is forced to seek out a large cooperative plant who will just blend in your olives with all others and in many cases will not accept small quantities. The answer is to purchase, perhaps with a group of friends, a small masher and old style press with mats. In this way you avoid the travel, can produce your very own oil and not mix ecologically grown olives with others. I am doing just that this week using a friends press that can press batches betwen 100 and 200 kilos but smaller units go as low as batches of 25 kilos.
